Who would have thought that the best hummus I’ve ever had would be found in Maui…at an Italian restaurant? But it’s true! In fact, I enjoyed the hummus at Ferraro’s Bar E Ristorante at the Four Seasons Maui so much that I returned again for lunch the next day solely for the hummus (oh, and the blueberry mojito!). And because we raved about it ad nauseam to the staff, they shared the recipe with us. Now that’s great service. So now I’m sharing it with you:
Ferraro’s Hummus at the Four Seasons Maui at Wailea
Approximately 28 oz.

Ingredients:
23 oz. Soaked, Cooked and chilled Chickpeas
1.3 oz. Tahini
2 oz. Extra Virgin Olive Oil
1 clove Garlic
1 oz. Fresh Lemon Juice
1 tsp Kosher Salt
1 pinch Black Pepper
_____________________________________________________________________________ Method: Combine garlic with lemon juice in blender and purée. Add the chickpeas and tahini and puree, adding olive oil as needed to achieve proper consistency. Add lemon juice to taste. If the hummus is too thick add a little water to adjust the consistency.
